Past week, more than 3 people have asked the banana bread recipe I've eaten. I consider those 3 “a lot of people” interested in a natural bread. It's a corn free, nuts free, dairy free, casein free, wheat free, gluten free, yeast free, delicious Banana Bread. Also organic, vegetarian, and almost vegan, but if you use guar gum instead the eggs... it is vegan too! Helping all the allergic people in the US, here it is my famous recipe.
INGREDIENTS
- 3 or 4 organic ripe bananas, smashed (yellow to black makes sweeter)
- 4 tablespoons oil (Trader Joe's grapeseed or coconut oil)
- 1/3 cup of rice milk (Rice Dream, or use coconut milk)
- 1/2 cup sugar from sugarcane (the original says 1 cup, but 1/2 is enough for me)
- 1 teaspoon organic cinnamon (Simply Organic)
- 1 teaspoon baking soda (Ginger Evans)
- Pinch of pink salt (Himalayan salt from Trader Joe's)
- 2 cups of brown rice flour (Whole Foods, or Earth Fare)
- 2 yolks* (cage free, no antibiotics, free range, organic)
- 2 egg whites, beater* (beater is important because it works as an yeast)
- *For a vegan recipe use 1 teaspoon of guar gum instead. You won't have the same fluffy, but still yummy.
METHOD
If you have strong arms you won’t need a mixer for this recipe. Preheat
the oven to 350°F (175°C). With a wooden spoon, mix the oil into the mashed
bananas in a large mixing bowl. Mix in the sugar, rice milk, and yolk. Sprinkle the baking
soda, salt and flour over the mixture and mix in. Add the beaten egg whites last, mix slowly. Pour mixture into a glass, or metal pan without butter. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
Yield: Makes one loaf. I keep in a ziplock for craving at work.
