Flaxseed Bread, corn-free, dairy-free, casein-free, wheat-free, gluten-free, yeast-free, and nut-free



I decided sharing all my all natural breads recipies here. One day, maybe I will decide to bake for selling in the US. This flaxseed bread it's corn free, nuts free, dairy free, casein free, wheat free, gluten free, yeast free, and delicious. Also organic, vegetarian, and almost vegan. Try to use guar gum instead the eggs... it will be vegan too! Helping all the allergic people in the US, here it is my easy to bake recipe.
  • Prep time: 10 minutes
  • Cook time: 1 hour

INGREDIENTS

  • 4 tablespoons oil (Trader Joe's grapeseed or coconut oil)
  • 1 cup of rice milk (Rice Dream, or use coconut milk)
  • 1/2 cup sugar from sugarcane (use 1 cup if you like sweeter)
  • 1 teaspoon baking soda (Ginger Evans)
  • Pinch of pink salt (Himalayan salt from Trader Joe's)
  • 1 cup of brown rice flour (Whole Foods, or Earth Fare)
  • 1 cup of flaxseed millet (Hodgson Mill)
  • 2 yolks* (cage free, no antibiotics, free range, organic)
  • 2 egg whites, beater* (beater is important because it works as an yeast)
  • *For a vegan recipe use 1 teaspoon of guar gum instead. You won't have the same fluffy appearance, but still yummy.


METHOD

If you have strong arms you won’t need a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix the oil into the flaxseed in a large mixing bowl. Mix in the sugar, rice milk and yolk. Sprinkle the baking soda, salt and flour over the mixture and mix in. Add the beaten egg whites last, mix slowly. Pour mixture into a glass, or metal pan with no butter. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Yield: Makes one loaf. I keep in a ziplock for craving at work.
