Sweet potato coconut dessert, corn-free, wheat-free, gluten-free, eggs-free, dairy-free.

Much better dessert for a corn-free, wheat-free, dairy-free girl.

The detox diet is done, and now taking a close look to the kind of dessert I could improve a lot that recipe. This is a coconut based recipe, and coconut may be considered as tree nut for some people. In fact it comes from a palm. 

All the ingredients you'll need.
Peel, wash and cut 6 sweet potatoes.
Cook until gets soft, 360 degrees F, 30 minutes.
Mash the sweet potatoes.
1/2 cup of coconut flour.
Add to the mashed potatoes.
1/4 cup of coconut milk (Silk's products are CORN-LITE not CORN-FREE)
Add to the mix.
1/3 cup of sugar form sugarcane.
Add to the mix.
1/2 cup of coconut shredded
Add to the mix.
1 tablespoon of coconut oil
Add and mix everything.
This is the consistency you'll get.
Using 2 spoons make some "balls".
This is the visual you'll have.
If you have time, you can roll by hand real balls.
This is what you'll have.
You may like to cover some balls with shredded coconut. 
Or just use coconut on top as decoration before cook.


Preheat oven for baking for 45 minutes, 400 degrees F.






Wait until cool down, remove gently, and serve. 

Ingredients

1/4 cup of coconut milk (Silk Original)
1/3 cup of sugar from sugarcane
1/2 cup of coconut flour (Coconut Secret)
1/2 cup of shredded organic coconut (Let's do Organic)
1 tablespoon of coconut oil (Trader Joe's)
6 organic sweet potatoes (Trader Joe's)

How make it.

Cook the sweet potatoes in 1 1/2 cups of water until it's soft inside, 30 minutes. You may like remain this water to cook a vegetable soup for dinner. Look what a nice slicer we bought for doing that soup. 

Mash those potatoes. You may like using a sieve to keep out fibers. I don't care for fibers, so I didn't.

Mix to the mash potatoes all the ingredients, the shredded coconut, the milk, the sugar, the coconut flour and the coconut oil.

Make balls with spoons or gently roll those by hand.

Preheat oven for baking for 1 and half or 2 hours, 400 degrees F.

Wait until cool down to eat. Remain refrigerated.

Make 20 little desserts.
