Kind of dessert for craving. Good for Paleo Diet as well. |
It makes me happy while I wasn't eating anything different in a detox program. The available "kind of sweet" food in this restrict diet were sweet potatoes and coconuts. So, I decide to do something sugary for craving in the afternoons.
Peel, wash and cut 6 sweet potatoes. |
Cook until gets soft, 360 degrees F, 30 minutes. |
All ingredients you'll need. (Silk products are known as not safe for corn allergy.) |
1/2 cup of shredded coconut. |
Mix 1/2 cup of coconut milk, to re-hydrate the shredded coconut. |
In a bowl, remain 30 minutes. |
Mash the sweet potatoes. |
Put the mashed potatoes with the coconut. |
Mix, until you get this consistency. |
Put in silicone pastry cups, and preheat oven in 400 degrees F. |
They're ready in 1 1/2 hours. |
Ingredients:
1/2 cup shredded organic coconut (Let's do Organic)
1/2 cup coconut milk (Silk Original)
6 organic sweet potatoes (Trader Joe's)
How make it.
Cook the sweet potatoes in 1 1/2 cups of water until it's soft inside, 30 minutes. You may like remain this water to cook a vegetable soup for dinner. Look what a nice slicer we bought for doing that.
Mix the shredded coconut and the milk, keep at least 10 minutes to re-hydrate the coconut.
Mash those potatoes. You may like using a sieve to keep out fibers. I don't care for fibers, so I didn't.
Mix those mashed sweet potatoes in the hydrated coconut, put in pastry cups. Preheat oven for baking for 1 and half or 2 hours, 400 degrees F.
Wait until cool down to eat. Remain refrigerated.
Make 12 little desserts.
